Fried Fish Sandwiches
We made some very tasty fish sandwiches last week and I wanted to remember the details of them for the future.
Successful fish sandwich bar:
fried pollock (S&P, flour, egg, panko)
celeriac matchsticks in "remoulade" (mayo, preserved lemon, rice vinegar)
pickled radishes
napa cabbage chiffonade
cilantro
chips (Utz crab chips, specifically, but I'm sure most chips would do)
avocado
hot sauce
potato rolls
--could toss the napa cabbage and celeriac in remoulade together for a quick slaw and I think that would work very well
--we used the potato chips on the sandwich for some extra crunch
